In this article i will show you how to make Rugelach Cookie Recipe. Rugelach are little rolled pastries filled with any number of fillings such as cinnamon sugar or various types of jam or preserves.


RUGELACH COOKIE RECIPE


INGREDIENTS :


PASTRY


2¼ cups Carol’s Sorghum Blend
1 cup granulated sugar
1 tablespoon packed light brown sugar
1 teaspoon xanthan gum
½ teaspoon baking powder
½ teaspoon salt
1⁄8 teaspoon baking soda
½ cup (1 stick) unsalted butter or buttery spread and cut into tablespoons
1 large egg
1 teaspoon pure vanilla extract
1 teaspoon almond extract
White rice flour for rolling

FILLING


½ cup apricot or raspberry preserves
½ cup granulated sugar mixed with 1 teaspoon ground cinnamon
1 large egg, beaten, for egg wash
1 tablespoon granulated sugar, for sprinkling on cookies

DIRECTIONS :


Make the pastry: In a food processor, combine sorghum blend, granulated sugar, brown sugar, xanthan gum, baking powder, salt, and baking soda. Add the butter, egg, vanilla extract, and almond extract, and process until the mixture forms a ball or several clumps. Remove dough from food processor and knead with your hands until it is soft and pliable. Flatten the dough into fourths, wrap each fourth tightly in plastic, and refrigerate 1 hour.
Place a rack in the middle of the oven. Preheat oven to 350°F. Line a 15 × 10-inch baking sheet (not nonstick) with parchment paper. Lay a moistened paper towel on flat surface, such as a countertop. Cut a 10 × 10-inch piece of heavy duty plastic wrap. Place one sheet directly on the dampened paper towel.
Unwrap one quarter of dough (leaving remaining three quarters tightly covered on countertop) and work with hands until dough is no longer cool. Flatten into disk and place on plastic wrap that is dusted with white rice flour. Cut another 10 × 10-inch piece of plastic wrap and place on disk. With rolling pin, roll into a 9-inch circle, taking care to roll from the inside of the circle out to the edge and working in a clockwise fashion to keep the dough at an even thickness. Remove top sheet of plastic wrap.
Make the filling: Spread dough evenly with 2 tablespoons of the preserves and 2 tablespoons of the cinnamon sugar. Cut the circle into 8 equal wedges. Use a flat metal spatula or knife to gently lift the first wedge away from the circle to make it easier to roll. Starting from the wide end, roll each wedge up. Place the cookies, points tucked under, on prepared baking sheet. Repeat with remaining3 quarters of dough. Brush cookies with beaten egg. Sprinkle with granulated sugar.
Bake 15 to 20 minutes or until lightly browned. Remove from oven, cool cookies on pan 5 minutes, then transfer them to a wire rack to cool completely. Store, tightly covered, for up to 2 days or in the freezer for up to 1 month.

In this article i will show you how to prepare Chocolate Cookie Cake. Once assembled, this whimsical cake resembles a huge version of the cream filled chocolate cookies that children and children at heart love. It would be perfect for a child’s birthday party. . Makes 16 servings. Follow this step by step directions:


BEST CHOCOLATE COOKIE CAKE RECIPE


INGREDIENTS:


CAKE


1½ cups Sorghum Blend
1 cup sugar
½ cup unsweetened cocoa powder (not Dutch process or alkali)
1 teaspoon xanthan gum
¾ teaspoon baking soda
¾ teaspoon salt
Pinch ground cloves (optional)
1 cup buttermilk, well-shaken, (thinned with ¼ cup water if thick) or homemade Buttermilk
1 tablespoon pure vanilla extract
½ cup unsalted butter or buttery spread, such as
Earth Balance, at room temperature, or 1/3 cup canola oil
1 cup sugar
2 large eggs, at room temperature

FILLING


1 package (8 ounces) cream cheese or cream cheese alternative, such as Tofutti, at room temperature
2 cups Whipped Cream or whipped topping

FROSTING


1 cup powdered sugar
¼ cup unsweetened cocoa powder
1 tablespoon unsalted butter or buttery spread, such as Earth Balance, at room temperature
1 tablespoon water (or more if needed)

DIRECTIONS:


Place a rack in the middle of the oven. Preheat the oven to 325°F. Generously grease two 8-inch round nonstick (gray, not black) cake pans. Line the bottoms with parchment paper or wax paper, then grease again; set aside.
Make the cake: In a medium bowl, whisk together the sorghum blend, sugar, cocoa, xanthan gum, baking soda, salt, and cloves; set aside. In a measuring cup, combine the buttermilk and vanilla extract; set aside.
In a large mixing bowl, beat the butter with an electric mixer on medium speed until it is smooth and creamy. Add the sugar and beat 1 minute, scraping down the side of the bowl with a spatula. Add the eggs, one at a time, beating thoroughly after each addition.
With the mixer on low speed, add the sorghum mixture alternately with the buttermilk, beginning and ending with the sorghum mixture. Be sure to beat the dry ingredients thoroughly each time before adding the buttermilk. Spread the batter evenly in the pans.
Bake 25 to 30 minutes; or until a toothpick inserted into the center of the cakes comes out clean. Cool the cakes in the pans 10 minutes on a wire rack. Remove the cakes from the pans with a thin metal spatula, discard the paper, and cool completely on the wire rack.
Make the filling: In a medium bowl, beat the cream cheese on low speed until smooth. Gently fold the whipped cream into the cream cheese; set aside.
Make the frosting: In a small bowl, whisk together the powdered sugar and cocoa. Stir in the butter and water until the glaze is smooth, adding more water if necessary 1 teaspoon at a time to reach spreading consistency.
To assemble the cake, place one layer on a serving plate, topside down. Spread evenly with all of the filling. Place remaining cake layer on top, topside up, and spread with the glaze. Serve immediately and refrigerate the leftovers.

The lemon cookie recipe Texas, is another exquisite French creation. This cookie is a delicate lemon flavor and looks like a potato-shaped curve thin smart! These cookies are perfect for tea parties or brunch!
Ingredients
3 egg whites
1/4 cup salted butter, melted
2 teaspoons finely grated lemon zest
The lemon extract 1/4 teaspoon
1/2 cup granulated sugar
1/2 cup flour
Equipment
A medium bowl
Small microwave-safe bowl safely
Line a baking sheet
Greaseproof paper
Roll
Mixer
Step 1: In a medium bowl, let egg whites at room temperature for 30 minutes.
Step 2: In a small bowl suitable for microwave safe, melt butter over medium heat in a microwave.
Step 3: baking sheet with parchment paper and set aside.



Step 4: The lemon zest and lemon extract to the melted butter, mix well and set aside.
Step 5: After you have set for 30 minutes to beat egg whites with electric mixer on medium speed until soft peaks form.
Step 6: Add sugar gradually beating to form until stiff peaks.
Step 7: Duplicate in about half of the flour.
Step 8: Fold the butter mixture.
Step 9: Add the remaining flour, stir smooth.
Step 10: Preheat oven to 375 degrees F.
Step 11: For each cookie, place a spoonful of the mixture in the baking (bake cookies just 3-4 in one hour). Roll the dough into 3-inch circles.
Step 12: When the cookies are baking place a piece of baking paper on a rolling pin.
Step 13: Bake for 5-7 minutes or until is golden at the edges of cookies. Remove cookies immediately with a broad spatula and replace the roll preparation (Place the biscuits on the side that was against the baking sheet against the rolling pin).Fresh cookies on a roll, until the biscuits are shaped, carefully slide the roller in a refrigerated area.

Yummy wedding dress cookie favours are really one of my favourite ideas for wedding bomboniere. Guests love a cookie and particularly one home-made and decorated with love and affection.

Our wedding dress cookie favours make a great bridal shower, rehearsal dinner or wedding favour for your guests and look spectacular as well as taste divine! No guests will leave these scruptious favours on their plates!
To begin, youll need the 4 piece wedding cookie cutter set by Wilton at Pink Frosting. Youll also need a steady hand, disposable decorating bags and some extra cookies to experiment on before you get the techniques perfect. Here is the Wilton how to adapted to help us Aussies:

Wedding Cookie Ingredients

1 cup (2 sticks) butter softened
1 1/2 cups granulated sugar
1 egg
1 1/2 teaspoons vanilla extract
1/2 teaspoon no-colour almond extract
2 3/4 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt

Each cookie serves 1
Instructions
1. Preheat oven to 200 degrees c.
2. In large mixing bowl, cream butter with sugar with electric mixer until light and fluffy. Add in egg, vanilla and almond extracts. Mix flour, baking powder and salt; add 1 cup at a time to butter mixture, mixing after each addition.
3. Do not chill dough.
4. Divide dough into 2 balls. On a floured surface, roll each ball into a circle approximately 30cm wide and 0.3cm thick. Dip cookie cutter in flour before each use.
5. Bake cookies on ungreased cookie sheet on top rack of oven for 6-7 minutes or until cookies are lightly browned.

Wedding Cookie Decorations

One day ahead, using royal icing, pipe tip 3 teardrop flowers on wax paper covered cake board. Let dry.
Cut, bake and cool wedding gown cookies. Outline cookie using tip 2 and full strength color flow Icing.
Thin a portion of color flow icing and flow in cookie. Let dry for 2-3 hours before further decorating.
Using full strength colour flow and tip 2, pipe waistband and ribbon. Pipe tip 1 random swirls on top of dress and tip 1 dots along bottom. Attach flower with dot of icing.
