When it comes to making a dessert cake that the entire family would enjoy, this is one of my favorites to make. What makes this cake so fantastic is it's chocolate fudge-like consistency with the nutty crunchy topping. If you are a chocolate lover, then this one is for you.
Cake Ingredients:
1/2 cup butter, softened
2 oz. (2 squares) unsweetened chocolate
1 cup water
1 cup quick rolled oats
1 cup granulated sugar
1 cup brown sugar, firmly packed
1/2 cup chocolate flavored syrup
1/2 cup cold coffee
1 teaspoon vanilla extract
3 eggs
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
Topping Ingredients:
1/3 cup butter, softened
1/4 cup whipping cream
3/4 cup brown sugar, firmly packed
1/2 cup finely chopped nuts
Preheat oven to 350 degrees.
Lightly grease a 13 x 9" baking pan.
In a large saucepan, melt the butter and chocolate squares; stir in water. Bring chocolate mixture to a boil. Stir in the rolled oats, granulated sugar, brown sugar, chocolate syrup, coffee liquid, vanilla extract and eggs; mix until all ingredients are well combined. Stir in the all-purpose flour, baking powder and salt into the chocolate mixture, mixing well.
Pour the cake batter into your prepared baking pan. Bake in a 350 degree oven for 25-30 minutes or until the cake tests done when lightly touched in the center. You can also use a cake tester, if it comes out clean, it's done.
In a medium-sized saucepan, combine all of the topping ingredients in the order that they are given. Bring to a full boil over medium heat, stirring the mixture constantly.
Reduce heat and simmer for an additional 3 minutes or until the mixture has slightly thickened. Pour this hot mixture over your hot cake.
Place cake back into your oven and bake for an additional 3-4 minutes or until the topping is hot, bubbly and slightly browned. Remove cake from the oven and let it cool before serving.

Eliminating candida overgrowth from one's body requires eliminating processed foods, sugar and white flour from your diet, but it is still possible to enjoy something sweet to end a meal or to enjoy with a cup of coffee or tea.
Restricting one's diet in such a way that there is no allowance for desserts may mean that it is easier to fall off the wagon and go back to old ways of eating. This can be detrimental to a candida condition. Instead of only depending on your will power to overcome sweet cravings, choose candida-friendly dessert recipes that are big on taste and low on candida symptom triggers.
Once you have removed the sugar-laden foods from your diet, you may find that your taste buds change and the slightly sweet desserts that would not have cut it for you in the past will be more than satisfying as you live out your new healthy candida diet lifestyle.
Sugar is out, so what is in?
While you may not be able to snack on candy bars and traditional cakes, this is actually a good thing, because this type of eating not only promotes candida overgrowth but it also causes weight gain, blood sugar spikes and mood swings.
It can even lead to greater health problems such as high cholesterol, diabetes and heart disease.
Instead of these enemies of a healthy lifestyle, you can satisfy your sweet tooth with fresh fruits, which will taste even sweeter when the junk is out of your diet, as well as creamy dairy products and foods sweetened with Stevia.
Unlike other artificial sweeteners that have been known to cause health problems, Stevia is a plant-derived extract that is 300 times sweeter than sugar. Thus, it only takes a little to achieve the sweetness you desire.
Below you will find a few candida dessert ideas designed to keep your body on track as you fight candida overgrowth:
For the cheesecake lover
CHEESECAKE PUDDING
Combine softened cream cheese with a little bit of whipped heavy whipping cream.
Add Stevia and a splash of vanilla or sugar-free flavored syrups to taste. DaVinci offers a line of excellent sugar-free syrups in a variety of flavors. Chill the pudding until ready to serve.
PEANUT BUTTER SMOOTHIE
Blend together a couple of tablespoons of sugar-free natural peanut butter, 1 cup whole milk that is sugar-free, plain yogurt, a few tablespoons of heavy whipping cream, a few ice cubes and Stevia or sugar-free flavored syrup. If you enjoy the peanut butter chocolate combination, you can blend in a couple of teaspoons of unsweetened cocoa powder. Serve immediately of freeze until slightly slushy to enjoy an ice cream like treat.
For the fruit lover
STRAWBERRIES AND CREAM
Pour heavy whipping cream over frozen or fresh strawberries and sprinkle with Stevia if you prefer your fruit a little sweeter.
The combinations and possible creations are endless, so spend some time in the kitchen with candida-friendly ingredients to concoct delicious desserts you can enjoy while sticking to your candida diet. You may even have to fight off non-candida diet friends and family from eating your new desserts!

Included below are two popular dessert recipes. Give them a try and have a sweet ending to your meal.

To make Lamingtons:

Pavlova
It is said in 1935, Herbert Sachse, chef at the Hotel Esplanade in Perth, created this popular dessert to honour the visit of Russian ballerina, Anna Pavlova.
Meringues can be tricky, so it is important to start with clean, dry utensils. If the meringue cracks, fill in cracks with extra whipping cream.

Using a metal medium sized bowl, beat egg whites and salt together on medium speed until soft peaks form. 4. With mixer still running, sprinkle castor sugar, one spoonful at a time, beating well to mix into egg whites. Continue until all sugar has been used and peaks are stiff and glossy. 5. Remove from mixer and add vinegar, vanilla, and cornstarch, using a spatula to gently fold into mixture. 6. Pile mixture into centre of baking sheet, forming a circle with a hollow centre. 7. Turn oven down to 250 degrees F (130 C) and bake without disturbing for 1 1/2 hours. 8. Slice fruit and sprinkle with lemon juice to prevent browning. 9. Whip cream gently until soft peaks form. 10. Turn oven off and crack door, leave Pavlova in until cool. 11. Remove from oven and gently transfer Pavlova to serving plate. Fill hollow centre with fruit and top with whipped cream. 12. Immediately serve.

By becoming familiar with your own diabetic issues, you can begin to learn the way in which your own eating habits interact with your own personal condition; and therefore arrange meals, and amazingly, eat goodies which you imagined were not possible.
Let us take a simple view of precisely how diabetes can affect your system.
Your body produces glucose (a simple sugar) from the food products you consume which it uses for energy - a little bit like fuel for the automobile. That glucose steps straight into the cells in your own system and the cells utilize the glucose as energy. We all have a hormone called Insulin - this is a hormone that is generated by your system all on its own plus it helps the glucose move very easily into the cells within your body.
Diabetes is an illness which develops when the glucose is unable to enter into your cells, due to the fact that either there isn't an adequate amount of insulin in the body to assist the glucose, or maybe absolutely no insulin at all; or there's sufficient insulin and there is another biological reason why the glucose can't transfer to your cells.
When this occurs you may have "diabetes" and that's why somebody with diabetes is required to handle their blood glucose levels themselves as their system cant do this all by itself on auto-pilot. As for everybody, it's important that you manage what food you're eating by knowing what food makes glucose and by understanding what precisely carbohydrates, sugars and nutrients do to your glucose levels.
Does it mean that somebody with diabetic issues simply cannot eat sugar in any way and take pleasure in that all important cake or treat?
There is certainly still a belief around that somebody with diabetes cannot eat any kind of sugar (or anything related to sugar) at all. Thankfully this may not be strictly true. For everyone who would like to have balanced healthy diets, in particular someone who has diabetic issues, they have to really arrange their menu upfront and also eat all things in moderation.
Having many recipes at hand that are really simple to make, have uncomplicated ingredients, with surprisingly tasty results just got considerably easier.
Can you really cook an incredibly delicious diabetic chocolate cake?
The real final result that is desired from diabetic recipes is always to have a lesser amount of sugar but not to lose any sweetness to the flavor in the completed food. Experimentation with less sugar or sweetners can take quite a while with final results tasting anywhere from strange to totally inedible.
However, this isn't always happen. With excellent quality recipes you can still create yummy diabetic chocolate cake and other diabetic desserts which are perfect for yourself and even the entire family. Wise practice would certainly tell us that every one of us could have much less sugar within our diet - important for the diabetic in the household but great for everybody - especially if they won't taste the difference!

The word "dessert" comes from the old French word "desservir" which means to clear the table. Sometimes referred to as "afters" desserts are usually a sweet ending to a meal.
Included below are two popular dessert recipes. Give them a try and have a sweet ending to your meal.
Queensland Lamington
Originally devised as a method to use stale cake, Lamingtons are squares of butter or sponge cake dipped in melted chocolate, then rolled in coconut. This dessert recipe calls for store bought cake or cake that is already on hand.
Ingredients:
One butter or sponge cake cut into evenly sized pieces 500 grams icing or confectionery sugar 2/3 cup of cocoa 15 grams butter 1/2 cup milk 2 1/2 cups desiccated coconut
Icing Directions:
Into a medium bowl, sift the sugar and cocoa. Melt butter in small pan. Stir butter and milk into sugar and cocoa mixture. Bring medium sized pan of water to boil on top of stovetop; reduce heat. Place bowl on top of water, stir until chocolate is smooth and glossy.
To make Lamingtons:
Place squares of cake onto tines of a fork. Dip each cake into icing mixture, holding over bowl so excess icing can drip off. Toss chocolate covered cake squares into coconut. Place on tray to set.
Ingredients: 6 egg whites brought to room temperature pinch of salt 1 cup castor sugar 1 teaspoon white vinegar 1/2 teaspoon vanilla extract 2 teaspoons cornstarch/corn flour 1/2 cup of whipping cream 1 cup sliced fresh fruit such as strawberries, kiwi fruit, and blueberries
Directions:
Preheat oven to 400 degrees Fahrenheit (200 C). Lightly grease an oven tray, then line with baking paper. Using a metal medium sized bowl, beat egg whites and salt together on medium speed until soft peaks form. With mixer still running, sprinkle castor sugar, one spoonful at a time, beating well to mix into egg whites. Continue until all sugar has been used and peaks are stiff and glossy. Remove from mixer and add vinegar, vanilla, and cornstarch, using a spatula to gently fold into mixture. Pile mixture into centre of baking sheet, forming a circle with a hollow centre. Turn oven down to 250 degrees F (130 C) and bake without disturbing for 1 1/2 hours. Slice fruit and sprinkle with lemon juice to prevent browning. Whip cream gently until soft peaks form. Turn oven off and crack door, leave Pavlova in until cool. Remove from oven and gently transfer Pavlova to serving plate. Fill hollow centre with fruit and top with whipped cream. Immediately serve.

When it comes to making a dessert for our Thanksgiving holiday meal, I enjoy baking a homemade pumpkin cake with a delicious cream cheese filling.
This cake will take some time to make, but your time will be well spent. I guarantee you that you will get a lot of compliments from your family and friends once they taste it. If you have any left-overs, you will want to store them in an airtight container inside your refrigerator.
Preheat oven to 350 degrees. Spray a deep dish cake pan with nonstick vegetable cooking spray.
In a large bowl, combine the flour, baking powder, cinnamon, baking soda and salt, until they are well combined; set aside. In another large bowl, cream together the granulated sugar and softened butter, until they are creamy. Add in the eggs, pumpkin puree, milk and vanilla extract, beating well after each addition. Slowly add the flour mixture into the wet ingredient mixture, mixing well until all ingredients are combined.
In a medium-sized bowl, whip together the softened cream cheese with the granulated sugar until smooth. Spread 2 1/2 cups of cake batter evenly over bottom of your cake pan. Spoon cream cheese filling evenly over the cake batter. Carefully spread it across the cake batter using a silicone or rubber spatula.
Spoon remaining cake batter over cream cheese filling, spread evenly using a silicone spatula. Bake in your preheated oven for 45 minutes or until the cake tester comes out clean. (test the center of the cake.) Cool completely before adding the topping.
A few minutes before serving the pumpkin cake, sprinkle your desired amount of confectioner's sugar on top. Cut cake into desired serving pieces and top with a dollop of whipped topping.
