There are some people who seem to be natural bakers. They just seem to able to bake the perfect cake and other baked goods. In contrast others may follow the same recipe and have no luck at all. Instead the top or bottom is overdone or the cake is too dense or dry. For these people it can be discouraging to keep trying if there aren't enough successful results. But there are some common baking mistakes that may be affecting the finished product. By keeping these in mind while crafting your next cake you should have better luck in your future baking endeavors.

Cake Moisture

A dry cake is a common problem. This is often caused by too much flour or baking powder. An oven temperature that is too high or baking for too long can cause a dry cake as well. Too little liquid can be a cause, however you don't want too much liquid either as that can cause another problem.

Excess liquid can cause a cake to fall, meaning it will sink in the middle. This can also be caused if the cake isn't baked long enough or if you open the oven to check on the cake and let the oven door slam shut. It is best not to open the oven while the cake is baking. Occasionally old baking powder can cause this as well.

Cake Texture

If the cake is too course it may be because of too much baking soda or too little liquid in the batter. It is very important to measure all of the ingredients very carefully for your cake to turn out well.

A course texture can also be caused by baking at a temperature that is too low. To make sure your oven is actually heating to the temperature you set use a heat-resistant thermometer to check it. Some ovens run hotter and some run lower than what the dial states.

Removing The Cake From The Pan

If you have a hard time cleanly removing the cake from the pan there are a few things you can do. First make sure you use enough oil and flour when greasing the pan. The other thing that helps with this is removing the cake at the right time. If you try to remove it too soon while it is still too hot it may stick to the pan and crumble. If the cake is too cool it can also become stuck to the pan and be difficult to cleanly remove. Cooling the cake in the pan on a wire rack can also help with this.

By practicing a few times while keeping these tips in mind you should start to get the feel for these things so you too can easily bake the perfect cake.

I love my old fashion recipe collection, especially the cakes.  If you think it is too much trouble to make a cake from scratch, you are wrong.  Try these delicious old fashion cakes for some great desserts.  How about a Maple Syrup Cake for something different?  Anything with maple syrup brings back wonderful memories to me.  When I was growing up in Southern Indiana, one of the farmers in the area had a maple sugar camp on his property.  Every Fall he would hold a community weiner roast at the camp and the men would help stir the cooking syrup while the women served food and we kids played with our friends by running up and down the hillside.  It is another one of my favorite childhood memories.  It was so much fun and a good lesson, too, seeing how the syrup we enjoyed on our pancakes was made.  The Birdie Cake is also a Southern Indiana favorite.  I guess it was our version of the Southern favorite Hummingbird Cake.



MAPLE SYRUP CAKE
2 eggs
1 cup packed brown sugar
1 cup real maple syrup
1 tsp baking powder
1 tsp baking soda
1 cup sour cream
1 tsp vanilla
2 cups flour
powdered sugar for garnish


Combine eggs and brown sugar in a mixing bowl and mix well.  Stir in the maple syrup, baking powder, baking soda, and sour cream.  Add the flour and vanilla while mixing well.  Pour into a greased oblong cake pan (9 x 13).  Bake cake at 325 degrees for approximately 40 minutes or until it tests done.  Cool on a wire rack.  To garnish, dust with powdered sugar if desired.

Cut into 24 squares.

BIRDIE CAKE
2 cups sugar


2 large eggs
2 cups all-purpose flour
2 tsp baking soda
2-lb can crushed pineapple with juice (don't drain)
1/2 cup water
1 tsp vanilla extract

Cream the eggs and sugar together.  Add the rest of the ingredients and mix until well blended.  Pour into a greased 9 x 13-inch baking pan at 350 degrees for 45 to 50 minutes.


TOPPING:
1/4 cup butter (1/2 stick)
1 tsp vanilla extract
3-oz pkg cream cheese
1/2 lb powdered sugar


Soften the butter and cream cheese to room temperature.  Add the vanilla and powdered sugar.  Spread on the cake while the cake is still warm.


This makes a very moist cake yet uses very little fat.

An intimate gathering of a few loved ones will call for a smaller, simpler cake with a topper to match while a grander affair with hundreds of guests will naturally need a much larger cake


You definitely won't want a topper that's too small and dwarfed by the top of the cake, and alternately, you won't the topper to be so large that it dwarfs the cake itself, making it appear smaller or less glorious in some way.

Also, keep in mind the actual weight of the topper before falling in love with one as those that are too heavy will sink into the cake or possibly topple it over.

2. Forgetting the Budget


Many couples make the common mistake of forgetting to add all of those finishing touches into their budgets, like the ever important cake topper. If cost is a concern, be sure to take the time to find the best deal possible instead of wasting precious money, but also allow yourself to choose the cake topper that you'll love today and years from now while fondly looking at the photos.


Although keeping your budget in mind is important, you won't want to skimp too much on the cake topper as the cheaper varieties made from plastic inevitably make even the best and most gorgeous of wedding cakes somehow seem less so.


One option to consider is using one, or both, if available, parent's wedding cake toppers to save money as not only will this be a nice touch using a family heirloom and paying tribute to their marriage, but it will also fulfill the "something old" and "something new" tradition we all love.
