If you love coffee cake in the mornings but find yourself in such a rush you don't want to bother cutting a piece of cake, dirtying a knife, fork, and dish, try this recipe for Delicious Coffee Cake Muffins. They are quick and easy to make. If weekday mornings are hectic, make these muffins on Sunday night and have them ready to grab Monday through Friday. These are also great muffins to "share at the office".


COFFEE CAKE MUFFINS


1 1/2 cups all-purpose flour
1 cup sugar, divided
1 1/2 tsp baking powder
1/2 tsp salt
1/4 tsp nutmeg
1 egg, beaten
3/4 cup milk
1/3 cup butter, softened
1 tsp cinnamon
1/3 cup melted butter


Preheat oven to 350 degrees. Grease a 12-cup muffin pan; set aside.


In a medium bowl, mix the flour, 1/2 cup of the sugar, baking powder, salt, and nutmeg.

Beat egg and milk together in a small bowl. Beat the softened butter in a large bowl until light and fluffy. Add flour mixture and egg mixture alternately to the butter, mixing with a wooden spoon after each addition. Do not over mix! Spoon the batter into the prepared muffin pan, filling each cup about 2/3 full. Bake at 350 degrees for about 15 minutes or until a wooden toothpick inserted into the center comes out clean.

Mix the remaining sugar and the cinnamon in a small bowl. Remove the muffins from the pan and dip the muffin tops into the melted butter then into the sugar and cinnamon mixture. Place right side up on a wire rack. May be cooled or served warm.
