HOW TO MAKE APPLE CAKE RECIPE


INGREDIENTS :


For the fruit layer


2 Bramley apples, cored peeled and diced
2 tablespoons honey
1 teaspoon cinnamon

For the cake


150g butter
150g golden caster sugar
1 egg, beaten
50ml milk
190g self-raising flour

For the topping


40g butter
2 tablespoons soft brown sugar
80g rolled oats

DIRECTIONS :


Preheat the oven to 170˚C/gas mark 3. Grease and line a loaf tin, measuring approximately 23cm down the long side. First, make the fruit layer. This needs to be made first and allowed to go completely cool before using.
Place the fruit and honey in a saucepan and cook over a low heat until the apples begin to break down or ‘fall’ (no water needed over a low heat).
Add the cinnamon, stir to mix and place in a dish to cool. Next, make the cake…
Cream the butter and the sugar together.
Beat in the egg and milk and fold in the flour.
Spoon the mixture into the prepared tin.
When the apple and honey mixture is cool, spread it over the cake mixture. Finally, make the topping.
Melt the butter in a pan with the sugar over a very low heat. Remove from the heat and stir in the oats.
Spread this over the apple layer and bake for 55–60 minutes. Test to see if the cake is cooked by inserting a skewer into the centre; if the cake is done, the skewer will come out clean. If it isn’t done, put the cake back in the oven and bake for 5 more minutes.
Cool the cake in the tin for 20 minutes before transferring to a cooling tray or wire rack. Remove the paper after about 5 minutes. This will keep for 4–5 days in an airtight container.

Variations for the recipe:


Stew 100g of prepared gooseberries with 3 tablespoons honey until soft and allow to cool before using like the apples.
Stew 120g chopped rhubarb and 3–4 tablespoons honey until soft, cool and use in the same way as the apples.

Small Tip


For a slice able cake, make sure the apples are cold before cooking. If you want more of a pudding-like consistency, use warm apples to put on the cake, but put on the topping immediately and bake as quickly as you can, or the cake base will melt.

Using the butter pecan cake mix adds delicious flavor without the added effort of making up your own batter. Adding butter pecan cake mix, pecans, cinnamon and butter, you can make a fantastic cobbler in a snap. This is the perfect recipe when you want to make a great dessert with not a lot of work.

Serve it at holiday gatherings, potlucks or just because.

Apple Cake Cobbler


2 Cans Apple Pie Filling
1 Box Dry Butter Pecan Cake Mix
1/4 Cup Brown Sugar, packed firmly
1/4 Cups Pecans
Cinnamon, to taste
2 Sticks Salted Butter


1. Preheat the oven to 350 degrees Fahrenheit.


2. Grease a 9" x 13" baking pan.


3. Layer the ingredients in the following order.


4. Spread the apple pie filling evenly in the bottom of your greased pan.


5. Sprinkle the cinnamon to taste over the apple pie filling.


6. Spread the butter pecan cake mix evenly over the apple pie filling.


7. On top of the cake mix, sprinkle the brown sugar and pecans.


8. Cut the butter into ¼ patties and place evenly over the entire baking pan.


9.

Bake in the preheated oven for 50 minutes.

10. Serve and enjoy.

Do you ever remember your grandmother making pie squares? If you do, this recipe is sure to take you back in time. If not, start a new (old) tradition at your house. Make this deep dish apple pie in a 13 x 9-inch cake pan and serve pie squares. This is an old family recipe handed down through the generations. Try it; you'll like it. GRANDMA'S DEEP DISH APPLE PIE IN A CAKE PAN


An old family handed down recipe.


Preheat oven to 425 degrees.


Pastry for 10-inch two crust pie. See the hot water pie crust recipe below or use your favorite recipe.


Line a 13 x 9-inch baking pan with pie crust dough trimming to 1/2-inch overhang. Set aside.


FILLING:


1 1/4 cups sugar
6 tbsp all-purpose flour
1 tbsp ground cinnamon
12 cups thinly sliced, peeled Granny Smith apples
1/2 stick butter


Topping:


1 tbsp milk
1 tbsp sugar
1/2 tsp ground cinnamon


To prepare filling: Combine sugar, flour, and cinnamon in a small bowl.

Put apples in a large bowl and pour the sugar mixture over the apples; toss well to mix. Layer half the apple mixture over the dough in the baking pan. Dot apples with half the butter. Top butter with the other half of the apple mixture and dot with remaining butter. Top with another sheet of pie dough. Crimp edges of the two pastry sheets to seal. Cut some small slits for air to escape during baking.

To prepare topping: Brush the pastry top with the milk. Combine the sugar and cinnamon. Sprinkle mixture over the milk.


Bake at 425 degrees for 15 minutes.

Lower oven temperature to 350 degrees and bake another 35 to 40 minutes until bubbly and browned.

Note: May be made in a 10-inch deep dish pie pan if you wish the conventional shaped pie.


HOT WATER PIE CRUST


An old Indiana recipe.


3 cups all-purpose flour
1 cup lard (softened to room temperature)
1/2 cup boiling water
1 tsp salt


Mix all ingredients together with a spoon. Rut into refrigerator until cool. Roll out to make 3 single pie crusts. May be kept in freezer until needed.


Note: If you no longer use lard, this can be made with an equal amount of shortening.

This is quick and easy recipe for Apple Muffins. Recipe is adapted from grandmother’s dairy-free apple cake, often served for dessert on Friday nights. The apples are first macerated in sugar and oil. The result is an incredibly moist batter and one well suited to muffins. One warning: the muffins don’t brown, so bake them only until a toothpick or cake tester comes out almost clean. Follow the directions very carefully:


QUICK AND EASY APPLE MUFFIN RECIPE


INGREDIENTS


3 medium Granny Smith apples, peeled, cored, and diced
1 cup sugar
½ cup canola or vegetable oil
Nonstick spray or paper muffin cups
2 ¼ cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
¼ teaspoon ground cinnamon
¼ teaspoon grated nutmeg
½ cup milk (whole, low-fat, or nonfat)
1 large egg, lightly beaten, at room temperature

DIRECTIONS :


Toss the diced apples with the sugar in a medium bowl. Pour the oil over the top, stir well, and set aside at room temperature for 45 minutes.
Position the rack in the center of the oven and preheat the oven to 400°F. To prepare the muffin tins, spray the indentations and the rims around them with nonstick spray, or line the indentations with paper muffin cups. If using silicon muffin tins, spray as directed, then place them on a baking sheet.
Whisk the flour, baking powder, salt, cinnamon, and nutmeg in a second medium bowl until uniform. Set aside.
Using a wooden spoon, stir the milk and egg into the apple mixture until smooth. Then stir in the prepared flour mixture until moistened.
Fill the prepared tins three-quarters full. Use additional greased tins or small, oven safe, greased ramekins for any leftover batter, or reserve the batter for a second baking. Bake for 25 minutes, or until the muffins have rounded, slightly cracked tops. A toothpick inserted in the center of one muffin should come out with just a few moist crumbs attached.
Set the pan on a wire rack to cool for 10 minutes. Gently rock the muffins back and forth to release them from the tins. Remove them from the pan and cool them for 5 minutes more on the rack before serving. If storing or freezing the muffins, cool them completely before sealing in an airtight container or freezer-safe plastic bags. The muffins will stay fresh for up to 48 hours at room temperature or up to 2 months in the freezer.

Blend the batter well with the help of hand blender or other mixing appliance till the batter becomes smooth and lump free. Now spread this batter on the greased cake tin and bake it for 50 minutes at almost 150 degree Celsius.
