If the lobster is frozen then it has to be thawed first. Then wash the lobster tails and dry with paper napkins. Cut the tails lengthwise from the center of the hard top shells and meat, but not through the bottom of the shells. Finally, press apart the shell halves of tails with fingers.
To prepare sauce, melt butter in a saucepan. Remove the pan away from heat and add chives and lemon peel and stir nicely. Keep the remaining sauce aside after removing two tablespoons of the sauce.
Then grease the oven of the gas grill and preheat it. Then reduce the heat of the grill to medium.
Brush a portion of the two tablespoons sauce over the lobster meat and place it on the grill directly over heat with the meat sides down. Cover it with a lid and grill for six minutes. Turn lobster and brush the remaining two tablespoons sauce over it. Cover it again and grill for another six to eight minutes, until the lobster meat turns opaque.
Heat the sauce kept aside, stir occasionally. Serve the lobster tails with the sauce as dipping.

Ingredients to prepare Crab Cake are:

1 pound Crab meat
Two tablespoons mayonnaise
Eight saltine crackers
One teaspoon mustard
One egg beaten
One fourth teaspoon Worcestershire

Half teaspoon Old Bay seasoning
Salt
How to prepare:
First remove cartilage, if any from the crab meat. Then put the crab meat in a vessel and keep it aside.

Saltine crackers have to be crushed and to it add the egg, mayonnaise, mustard, Worcestershire, Old Bay seasoning and salt to taste and mix properly.

Then add the crab gently and mix again, just enough to amalgamate the ingredients.

Crab may break up into fine shreds and we do not want that to happen. Make six crab cakes and keep it in the refrigerator for not less than an hour.

Then heat two tablespoons of vegetable oil in a frying pan, especially non-stick pan and saut the crab cakes until they become golden brown on both sides.

Serve hot with tartar sauce, remoulade, or just put few drops of lemon juice over the cakes.

Lemon juice (fresh) – 1 tablespoon
Mayonnaise – 3 tablespoon
Dijon mustard – 1teaspoon
Panko (Japanese bread crumbs) – 1 tablespoon
Sea salt & black pepper (fresh)
Butter – 1 tablespoon
Garlic cloves (minced) – 2
Thyme (dried) – ¼ teaspoon
Once again, panko – ½ cup
To prepare the tartar sauce, stir the ingredients mentioned above all together in a small bowl. Keep it aside.
To prepare the lobster and crab cakes, the first step is to take a container and put the crab, lobster, chives, lemon juice, mustard, mayonnaise and 1 tablespoon of panko together. Stir the content.
Using sea salt and ground pepper, season the content to taste. Then cover the content and allow it to chill.
Now take a non-sticky frying pan and place it over moderate heat. Sauté the garlic in it till it turns golden.
Take the garlic out and add in it thyme and ½ cup panko and then cook it. Stir it till the crumbs convert into golden brown colour. Then cool the crumbs.
On a waxed paper sheet, divide the mixture into 8 mounds. Shape them like patties and coat each of the part with crumbs.

Preheat the oven to 425 degrees. Blend the egg in a bowl; add the lemon juice, mayonnaise and the Worcestershire sauce. Take another bowl and mix the celery seeds, dry mustard, seasoning, pepper and salt altogether. Once they are mixed, now add the dry and the wet ingredients together.



Remove the shells from the crabmeat and add the parsley with two tablespoon of bread crumbs. Mix all of these very gently so that the crab meat does not crumble.



Now add the crab mixture with the wet mixture and then blend them well. Then make 3 inch crab cakes out of this mixture. Once the crab cakes are made, coat them with the bread crumbs. Put the entire crab cakes into the refrigerator for an hour so that the crab cakes get chilled.



After an hour, bring out the crab cakes and put them on a greased cookie sheet. Bake the crab cakes for the next 20 minutes or at least until the cakes turn slight brown on the outside. EASY  HOMEMADE CRAB BOIL RECIPE


INGREDIENTS :


¼ cup kosher salt
2 tablespoons celery seeds
2 tablespoons finely cracked black peppercorns
1 tablespoon dry mustard
1 tablespoon paprika
1 teaspoon red pepper flakes
½ teaspoon ground allspice
½ teaspoon ground ginger
½ teaspoon ground cloves
6 quarts water
2 small onions, quartered
1 lemon, cut into eighths
4 bay leaves
1 ½ pounds very small red-skinned potatoes (if larger, cut in half )
Twelve 6-inch-diameter blue or rock crabs
6 ears corn, husked and halved

DIRECTIONS :


Mix the kosher salt, celery seeds, peppercorns, dry mustard, paprika, red pepper fl akes, allspice, ginger, and cloves in a small bowl; set aside.
Bring the water, onions, lemon, and bay leaves to a boil in a very large pot set over high heat. Add all but 2 tablespoons of the salt mixture (reserving those 2 tablespoons for garnish).
Add the potatoes and cook until fairly tender when pierced with a fork, about 15 minutes.
Use tongs to get the crabs into the pot. Add the corn, cover, and bring back to a boil. Cook until the corn and potatoes are tender, about 5 minutes from the moment the crabs hit the water. To tell if the crab is done, snap off one of the legs and make sure the meat inside is opaque, not translucent.
Drain everything in the sink. Discard the onions, lemon, bay leaves, and spices. Place the crabs, potatoes, and corn on an enormous platter. Sprinkle the remaining spice mixture over everything. Serve with mallets on the side for cracking open the crabs.
