Butter cake recipes will always be disappointing if you don't use the correct mixing method.  While most people blame the oven for cake faults, the problem is not in the baking.  The most common cake faults stem from mistakes made during mixing.


 


Mixing methods are the most important step in creating a great cake, no matter what the recipe.


 


The "Creaming Method" is used for high-fat cakes.  In butter cake recipes, there is usually a great proportion of butter in the formula.  Butter is fat.  Shortening is fat.  Creaming together fat and sugar is the first step in this "conventional" method of cake mixing


 


The most common mistake people make with this method is not incorporating enough air during this first step.  The goal of creaming together fat and sugar is not only to create a consistent mixture, but to trap air within the fat which will eventually give structure and texture to the cake.


 


Correctly creamed fat is light, fluffy and smooth.  If your butter/sugar mixture is coarse, dense, sparkles from grains of sugar, or is crunchy when tasted, you've got more mixing to do.


 


The second step in the creaming method is the most important.  It can mean the difference between a moist tender cake and one that is tough and dense.  While chemical leaveners like baking soda and baking powder help the cake rise, it's the addition of eggs that prevent it from falling back down.


 


Step two includes forming an emulsification.  Two unmixable items that are brought together are said to be "emulsified".  Fat and water don't mix.  But, egg yolks are the liason or emulsifying agent that will hold them together during baking.  So, creating a strong emulsification is key.


 


When you add the eggs to the creamed butter and sugar, it should be in multiple stages, in a slow stream.  Never add the next egg until the previous one is fully mixed into the butter.  The butter/sugar mixture will appear wet and uncombined when the eggs are not completely mixed in.


 


Since chocolate is fat, melted chocolate is added immediately after the eggs to be included in the emulsification process.  You're now looking at the beginning batter for a chocolate butter cake.  You've created the foundation, now it's time to give texture and structure to the cake.


 


The fourth step in the creaming method is to alternate the sifted dry ingredients and liquid ingredients until you have a smooth, spreadable batter.  Sifting of dry ingredients is an important step because it too incorporates air, giving a lighter texture to the cake.


 


How do you tell when your chocolate butter cake is done?  There are three ways:


 


1) Shrinkage -  As the egg and flour proteins coagulate, they shrink and pull the cake from the sides of the pan.  One clue to a completely baked cake is a slightly smaller cake than the pan


2) Springage – Press on the top of your cake slightly with a finger.  If the cake immediately recoils, it's done.  If a fingerprint indentation is left, you'll need more time in the oven.


3) Stabbage – Stab it with a toothpick.  If it comes out dry, the cake is finished.


 


Repeating the necessary steps in the creaming method will give you the best results when making a chocolate butter cake, pound cake, or even cookies from scratch.

Each step of this process builds on the previous.  Butter and sugar are creamed to trap air.  Eggs are added to create an emulsification.

 


These are the building blocks of a great cake that has nothing to do with what happens in the oven.

Low Fat Peach Ice Cream

Equipment

1.Ice cream maker

2.Spatula

3.Blender

Ingredients

1.Ripe peaches, frozen: 3 cups

2.Evaporated milk: 1 can

3.Knox gelatin: 1 pack

4.Sugar: cup

5.Vanilla extract: teaspoon

Preparation

Take the evaporated milk, sugar and vanilla extract and combine it using the blender. Take the Knox gelatin and place it in half a cup of water and then heat the mixture for about 15 to 20 seconds in a microwave. Stir until the gelatin completely dissolves. Add this mixture to the contents of the blender and blend again. Now take the ripe peaches and cut them into chunks. Make sure the peaches are completely frozen. Add the chunks one at a time. Adding them altogether creates a mess. Now place this mixture in the ice cream maker. It will take about 15 minutes for the ice cream to freeze. Take it out of the ice cream maker once it is frozen and serve.

Low fat Banana Ice Cream

Equipment

1.Ice cream maker

2.Blender

Ingredients

1.Evaporated milk, refrigerated: 1 can

2.Vanilla extract: teaspoon

3.Knox gelatin: 1 pack

4.Water: cup

5.Bananas, frozen and sliced: 3

6.Sugar: cup

Preparation

Take the can of cold evaporated milk, vanilla and sugar and mix it using the blender. Place the Knox gelatin in half a cup of water. Heat this mixture for about 15 to 20 seconds in a microwave. Keep stirring until the gelatin fully dissolves. Heat the water some more if the gelatin does not dissolve. Now pour the gelatin mixture into the blender with the ice cream mixture and blend it again. With the blender still on, start dropping in a few banana slices slowly. Let the banana slices blend in completely before adding more. Now pour out this mixture into the ice cream maker. It will take around 15 to 20 minutes for the ice cream to freeze. Once frozen, take the ice cream out of the machine and serve.

1 cup of whole wheat pastry flour
1/4 of cup fructose
14 cup of canola oil
1 tsp of baking powder
1 tbsp of honey
1/2 cup of low fat buttermilk


Preheat the oven to 375 degrees F.
Combine the water, apples, cornstarch, fructose, and cinnamon in to a sauce pan over medium heat.
Pour the apple mixture into a dish.
Combine the pastry flour with the baking powder to make biscuit dough.
Add the canola oil and stir well.
Next, add the buttermilk and honey, and stir with a fork until the mixture is moist.
Pour the biscuit dough on the apples with tablespoos.
Bake for 20 minutes or so until done.
Serve warm and enjoy!


Strawberry Banana Sundae
1 package of sugar free strawberry gelatin
6 ice cubes
1 cup of boiling water
4 fresh strawberries
4 tablespoons of whipped topping


Take a small bowl and allow the gelatin to dissolve in boiling water.
Let the bowl cool for ten minutes.
Place the ice and gelatin into the blender, cover, and process until ice is dissolved.
Add bananas, and blend for another minute or two.
Pour into four dishes, and refrigerate for thirty minutes or until set.
Garnish each with a strawberry and tablespoon of whipped topping!


Almond Biscotti


1/2 cup of sugar
1/4 cup of finely chopped almonds
4 egg whites---lightly beaten
2 teaspoons of almond extract
1/4 teaspoon of salt
2 cups of all purpose flour
2teaspoons of baking powder
2 tablespoons of margarine


-Preheat your oven to 375 degrees F.

Place the almonds into a baking pan, and then bake for seven or eight minutes. Watch carefully for the almonds to turn golden brown, and then set aside.

-Beat margarine and sugar into medium sized bowl with electric mixer. When smooth, add egg whites and almond extract. Continue to mix, and then combine flour, salt, and baking powder into a large bowl. Mix that as well, and then stir almonds and egg white mixture into flour mixture. Make sure it is well blended.


-With cooking spray, spray two 9" x 5" loaf pans. Evenly divide the dough and spread it between pans. Spread evenly over the bottoms of the pans with wet fingertips.


-Bake fifteen minutes or so. Insert a knife into the center to ensure that it is done.


-Turn loaves onto cutting board, and as soon as they are cooled down, cut each into 16, ½" thick slices!


-Place slices onto baking sheets sprayed with cooking spray. Bake for five more minutes; turn slices over and bake five minutes on other side, or until golden brown.


-Serve and enjoy!

Here are three old-fashioned recipes for peach cobbler, peach dumplings, and peach cake with sweetened cream.


Peach Cobbler


1 quart peaches


1 1/2 cups water


1 cup sugar


1 1/3 cups flour


1/4 teaspoon salt


1 teaspoon baking powder


2 tablespoons sugar (additional)


1 egg


1/2 cup milk


Peel the peaches, remove the pits, and cut the fruit into thick slices. Cook with the water and cup of sugar. This can be done in a baking dish in the oven, or a saucepan on the stove.


Meanwhile, sift the flour, salt, and baking powder. Add the 2 tablespoons of sugar, and mix to a light batter with the beaten egg and milk. Pour this over the cooked fruit.


Bake at 350 degrees for 30 minutes.


Peach Dumplings


2 cups flour


4 teaspoons baking powder


1/2 teaspoon salt


1 1/2 cups sugar


2 tablespoons shortening


7/8 cup cream


Peaches


2 1/2 cups cold water


Mix and sift flour, baking powder, and salt.

Rub in shortening with tips of fingers, add cream gradually, cutting it in with a knife. Turn on a floured board, knead slightly, pat and roll out to 1/2 inch thickness.

Shape with a large biscuit cutter. Pare juicy, ripe peaches, cut in halves lengthwise, remove stones. Cut in quarters and place 3 quarters of a peach on each circle of dough, enclose them, pressing the edges together. Place in a buttered cake pan 1 1/2 inches apart. Sift sugar around dumplings and pour cold water over sugar.


Bake at 350 degrees for 20 minutes, or until golden brown. Baste 3 times.


Peach Cake with Sweetened Cream


2 cups flour


4 teaspoons baking powder


1/2 teaspoon salt


3 tablespoons shortening


3/4 cup milk


5 peaches


Raisins,if desired


Sugar


Mix and sift the first 3 ingredients.

Rub in shortening with tips of fingers. Add milk, mixing it in with a knife. This dough must be soft enough to spread in a shallow, well-buttered pan to the depth of one inch. (Add more milk if necessary.)

Pare ripe, juicy peaches. Cut in halves lengthwise. Remove stones and press halves into dough (cut side up) in parallel rows, leaving a little space between rows.


Brush peaches over with melted butter, sprinkle with raisins and sugar. Serve hot, either plain, with milk, cream, or even whipped cream.

1 1/2 cups unsalted butter, at room temperature, plus more for the
Soufflé cups
Granulated sugar
12 ounces bittersweet or semisweet chocolate, coarsely chopped
8 large egg yolks, plus 7 large eggs
1 1/2 cups confectioners' sugar
1/4 cup all-purpose flour
18 fresh raspberries
6 scoops vanilla ice cream


Cooking Preparation
1. Preheat the oven to 350F. Generously butter six 6-ounce soufflé cups and sprinkle each with granulated sugar. Tap out the excess sugar.


2. In the top of a double boiler set over barely simmering water, melt the butter and chocolate together. Remove the top of the double boiler pan from the heat.


3. In the bowl of an electric mixer fitted with the whisk attachment and set on low speed, beat the egg yolks and eggs for about 2 minutes, or until light and smooth. With the mixer running, pour the melted chocolate into the bowl and mix for about 2 minutes longer.


4. Put the confectioners' sugar and flour in a fine-mesh sieve and sprinkle into the chocolate mixture. With the mixer on medium speed, beat for 30 seconds, or until well mixed.


5. Pour the batter into the prepared soufflĂ© cups, leaving about ¼ inches of space below the rim. Set the soufflĂ© cups on a baking sheet and bake for 18 to 20 minutes, or until puffed and about 1 inch higher than the rim. The centers will be soft but not sticky.


6. Remove the cakes from the oven and immediately invert each onto a serving plate. Remove the cup, and garnish each plate with three raspberries and a scoop of vanilla ice cream.
