Ingredients:
75 Grams or 1/3 cup of softened butter
110 Grams or 1/2 cup of unrefined caster sugar
1 Egg
2 Teaspoon of baking powder
Grated rind of a lemon or an orange (optional)
4 Pieces of ripe bananas
50 Grams or 1/2 cup of chopped walnuts

Step By Step Procedure:

·  Set 12 pieces of paper muffin cases into a muffin tin.

Then, heat the oven to the temperature of 350F or 180C.
·  Put the butter, caster sugar and the egg to a bowl. Mix in the flour and the baking powder. Use an electric mixer, beat until combined well. After which, add the grated lemon or orange rind.
·  To easily mash the banana, slice the bananas into small pieces.Add it to the flour mixture next to the walnuts and then mix them again thoroughly.
·  Transfer the mixture to the cases or tins and then bake it until the color turn brown. To know if it is cooked, press it and when it's ready it usually springs back.It takes about 50 minutes for the cake to be done.   
·  Before transferring to a wire tray, let it stand for 10 minutes.
This recipe is so simple and the outcome is so delicious. Many people don't like the idea of eating raw eggs even when they are concealed in a recipe.  If you are one of those people, as I am, here is a great recipe for a delightful Spring (or anytime) Dessert.  This Banana Split Cake is made without using eggs.  It is a beautiful dessert anytime of the year.  However, it is an especially great dessert for Springtime and for your Easter table or buffet.  For an Easter dessert, you could color some coconut green by using a dab of green food coloring.  Sprinkle over the top of the cake or gather in the center and top with some jelly beans or miniature malted milk ball eggs to really impress the children in your family.


NO EGG BANANA SPLIT CAKE


2 cups graham cracker crumbs
1/2 cup melted butter
1/2 cup chocolate syrup
2 cups powdered sugar
1/2 cup butter (not melted)
3 bananas
1 pint strawberries
1 cup crushed pineapple, drained & reserved
1 carton (9-oz) frozen whipped topping, thawed
1/2 cup chopped pecans
marashino cherries for garnish


In a small mixing bowl, mix together the graham cracker crumbs and the melted butter until well mixed.

Spread the mixture onto the bottom of a 9 x 2 x 13-inch pan or casserole dish. Drizzle the chocolate syrup over the crust. Combine the powdered sugar and the (not melted) butter together and beat until fluffy. Pour this sugar mixture over the chocolate syrup. Slice the bananas into the reserved pineapple juice, drain and add along with the strawberries over the sugar mixture. Top evenly with the pineapple. Spread the whipped topping over all. Sprinkle the chopped pecans over the whipped topping and add cherries, as desired, for garnish.

1 cup banana, mashed
3 eggs, lightly beaten
1 cup vanilla yogurt, lowfat
21/2 cups unbleached flour
¾ cup whole milk
2 tablespoons granulated sugar
1teaspoon baking powder
½ teaspoon salt
6 tablespoons vegetable oil
½ cup walnuts, chopped


This is the way to prepare the batter. Starting with the dry ingredients. Mix them together in one bowl in a separate bowl mix together the wet ingredients. After you have done this you can gently add the dry ingredients into the wet, all the while using the hand mixture to blend the two.

What you want is a batter of good consistency and slightly thicker than pancake batter.

Spoon about ½ cup of batter onto the center plate in the waffle maker. Close the lid and let bake until the timer goes off.


You can dress them up as you see fit. One great way is to put slices of banana on the top along with a few sliced strawberries. Top with powdered sugar and syrup. Freeze the leftovers only if you used the baking powder. The yeast variety does not keep as well. Children love waffles anytime day or night. You can cut them into strips and sprinkle them with powdered sugar for a great snack anytime.

Back in the early 1980's my grandmother spent a Saturday afternoon teaching me how to make her banana spice cake. I am not sure why they call it sea-foam frosting, but I can tell you...it does taste delicious!


What I really enjoy about this recipe is the right combination of sweet buttermilk, ripe bananas, along with the spices. If you don't have buttermilk on hand, you can substitute with regular milk.


Banana Spice Cake Recipe


Ingredients:


2 1/2 cups sifted flour
1 2/3 cups granulated sugar
1 1/4 teaspoons baking powder
1 1/4 teaspoons baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground nutmeg
1/2 teaspoon ground cloves
2/3 cup vegetable shortening
1 1/4 cups mashed ripe bananas
2 eggs
2/3 cup buttermilk


Preheat oven to 350 degrees.


In a large mixing bowl, sift together all of the dry ingredients.

Stir in the shortening, buttermilk and mashed bananas. Mix all ingredients until the flour is wet and everything is well combined.

Lightly spray two 9" round cake pans with nonstick cooking spray. Pour batter evenly into each pan and bake in a preheated 350 degree oven for 35 minutes or until the center of the cakes are done.


Sea-Foam Frosting Recipe


Ingredients:


2 egg whites
1 1/2 cups brown sugar, firmly packed
5 tablespoons water
1/4 teaspoon salt
1 teaspoon vanilla extract


In a double boiler, combine the egg whites, brown sugar, water and salt...beating slightly to mix the ingredients. Place over rapidly boiling water; beat with an electric mixer at medium speed, until the frosting stands in peaks (about 6 minutes).

Remove from the heat and stir in the vanilla extract and beat again until mixture is thick enough to spread on your cooled cake.
