Below are the most common cake decorating mistakes and easy ways to rectify them.


Anyone who has ever frosted a cake knows there are times when the icing will pull apart the top of the cake and cake crumbs get will into the frosting. To stop this from occurring, you should start with a crumb coat. This is the same icing that you are using to frost the cake, but it has been thinned down a bit. That way you will cover any part of the cake that might crumb with a thin layer of icing, and it will give you a base over which you will put a regular coat of icing. Take care that you do not make the icing too thin. It should be thinned down just enough to cover the cake without tearing it and picking up crumbs. After you apply the crumb coat to the cake, you need to let it set about 2 hours or more before you apply the rest of the icing. In fact it should rest in the refrigerator, and can be kept there overnight before you need to add more icing.

It is okay if you see crumbs in the crumb coat, they will be stuck in this first layer of icing and will not effect the next layer of icing. The cold will set the icing and it will be a cinch to ice after that.

There can be a problem with fillings spilling out the sides of the cake. There are ways to stop this from happening when your cake decorating involves a filled middle.


1. Bake your cake the day before you are planning to fill it. This will make the cake firmer and will give it time to settle. A freshly baked cake will be unstable and will not hold fillings as well as when they are settled. 2. You can also use icing to make a dam to stop the filling from spilling out. Once the dam has been made, you can frost the whole cake with a crumb coating.

The cake should be set in the refrigerator for 2 to 3 hours, or overnight, this will firm up the icing and will keep the filling from oozing out the sides. The dams made of icing will firm up and keep the filling in.

If you are a busy person and don’t have time to bake and decorate a cake all at once, you can bake the cake and freeze it until you need to decorate it. A cake can be kept in the freezer a couple of weeks before it needs to be used. You must prepare the cake for freezing by wrapping three layers of strong cling wrap around the cake, followed by one layer of aluminum foil just prior to freezing. If you do not follow this procedure, your cake will dry out and crumble. You will also need to make sure the cake is completely thawed before attempting to ice it.


You will need to allow the cake to defrost slowly, at room temperature, for one or two days until it has defrosted. Icing a cake before it has thawed will make the icing sweat and become mushy, this will ruin your cake decorating, and all your hard work will be for nothing.

Pears and almonds have a natural affinity for one another making them the perfect flavor combination for a gluten free cake. Pears are high in fiber, sodium, fat, and cholesterol free and an excellent of vitamin C which means eating this delicious cake is actually good for you!

The pears in this recipe are chopped, cooked briefly in the microwave and pureed with a fork to make a sort of pear sauce. The pear sauce adds not only flavor but gives this cake a rich, buttery texture which is surprising considering the total lack of butter or butter substitutes.

The use of almond flour makes this cake not only gluten free but grain free as well. Many people have discovered the advantages of a grain free diet in healing the small intestine after discovering they have Celiac Disease or gluten intolerance. The use of almond flour instead of wheat flour also makes this a particularly good cake for Passover.

Whether you follow a gluten free diet or not, the one thing that everyone agrees with is that this cake is absolutely delicious!

Pear Almond Cake

Ingredients

4 ripe but firm Pears- use divided

1 cups plus 2 teaspoons granulated sugar - use divided

1 tablespoon freshly squeezed lemon juice

3 cups finely ground blanched almond meal

8 large eggs

1 teaspoons pure vanilla extract - use divided

1 tablespoon agave nectar or honey

1 tablespoon grapeseed (or other neutral tasting) oil

cup sliced almonds

Directions

Preheat the oven to 350 degrees. Lightly spray a 9 or 10 inch springform panwith gluten-free non-stick cooking spray. Cut a circle of parchment to fit the bottom of the pan, place in the pan and spray it lightly with more cooking spray.

Peel and core the pears. Chop three of the pears roughly and slice the fourth into about inch slices. Take the chopped pears and put in a small, microwavable bowl with the lemon juice and 2 teaspoons of sugar. Cover and microwave on high power for 4 minutes. (Alternatively you can cook on the stove for 10 minutes over medium heat in a covered saucepan.) Mash the pears into a coarse puree with a fork or wooden spoon. Let cool.

Put the almond meal and 1 cups of sugar in a food processorand give it 4 or 5 long pulses. Add the eggs, 1 teaspoon of vanilla extract and the cooked pears and puree the mixture. Pour into the prepared pan.

In a small skillet, heat the agave or honey with the oil, stirring to mix until the mixture starts to bubble. Take off the heat and stir in the remaining teaspoon of vanilla. Add the pear slices and toss gently to coat.

Sprinkle the sliced almonds over the top of the cake. Add the pear slices in a spoke configuration and spoon the agave or honey/oil mixture over the top of the cake.

Bake for 45 - 55 minutes or until the cake is nicely browned and a toothpick inserted into the center comes out clean. Check the cake after about 35 minutes, if it browning too much, place a piece of foil over the top.

Let the cake cool in the pan for about 30 minutes then remove the sides of the pan and transfer to a serving platter (removing the parchment is optional but recommended). The cake is best served slightly warm.

Makes 12 slices.

How to prepare Rapid Puff Pastry? Also called quick puff pastry, this pastry starts out just like pie dough. Very cold pieces of butter, flour, salt, and ice water are briefly mixed, leaving large, visible chunks of butter. The dough is given its turns immediately. The rapid dough will not rise as high as the classic, but the texture is still flaky and delicate, making it an excellent all-purpose pastry. Slightly more dense than classic puff pastry, it stands up well to savory fillings that tend to be heavy. Napoleons are much easier to cut from rapid puff pastry; when sliced, the layers tend to shatter and crumble less than with classic. Puff pastry scraps are perfect for napoleons, since the dough is docked and weighted to prevent a high rise. Ingredients and directions. Follow them very carefully:


RAPID PUFF PASTRY - EASY RECIPE


INGREDIENTS :


3 ⅓ cups bread flour (4 lb)
1 ½ tsp salt (1 oz)
2 cups unsalted cold butter, cut into ½ inch chunks (4 lb)
½ cup plus 1 Tbs (5 fl oz) ice water (1 lb 4 oz)

DIRECTIONS :


Combine the flour and salt in a mixer bowl. With the mixer fitted with the paddle and set on lowest speed, add the butter to the flour and salt. Add the ice water in a steady, continuous trickle; continue mixing until the dough just begins to come together. Mix until just barely combined; large pieces of butter should remain. Form into a rough block; chill at least 1 hour. (Pounding the well-floured mass into a shape on a floured surface with a rolling pin minimizes handling.) Roll out into an 8 by 20-inch rectangle. Fold the short ends of the dough inward to meet at the center. Fold the dough at the center as if you were closing a book (4 fold or book turn). Repeat for the second and third turns, rotating the dough package 90 degrees so that when the dough is rolled, the layers of the previous fold now become the short ends of the new rectangle. Refrigerate 1 hour before rolling and shaping.
Puff pastry can be refrigerated three to four days without losing quality. Freeze the assembled products, such as apple turnovers, rather than the whole paton for best results. Thaw filled products in the refrigerator overnight before baking. Unfilled or minimally filled products, such as palmiers or vol-au-vent shells, can be baked directly from the freezer.
For rapid puff pastry, bake small cookies (palmiers, sacristans) at 425°F, sheet-pan-sized puff pastry for napoleons at 400°F, and large filled tortas at 375°F.

Makes: 2 pounds 6 ounces dough

The following are a few easy cakes to make at home:


1.) Sponge Cake: This cake is very easy to make and is light, tasty, and perfect for the family or when entertaining guests.


Ingredients: 4 oz (110g) self raising flour, sifted, 1 tsp baking powder, 4 oz.(110g) soft margarine, 4 oz (110g) sugar, 2 large eggs, 2-3 drops vanilla


The entire baking time from start to finish takes less than an hour.


2.) Ice Cream Cake: A delicious treat children will love.


Preparation time: 20-30 minutes. Freezing time: 8 hours or overnight.


For one 8 inch ice cream cake you will need: 3 c.

chocolate ice cream, slightly softened 5 Heath bars or 5 oz. English toffee, coarsely chopped 4 tbsp. chocolate syrup 3 tbsp. coffee liqueur 3 c. vanilla ice cream, slightly softened

3.) Chocolate Cake: Preparation time takes only a few minutes. The result is moist and delicious chocolate cake.


Ingredients: 4 oz (110g)self raising flour, sifted, 1 tsp baking powder, 4 oz (110g)soft margarine, 4oz (110g)sugar, 2 large eggs, 1 tbs. cocoa powder. Filling ingredients:


2 oz (55g) butter or quality margarine, 4 oz (110g) icing/confectioners' sugar, 1 rounded tbs cocoa powder, 2 tsp of milk.


Preheat the oven to 170 deg C, 325 deg F.


Sift the baking powder and flour into a large mixing bowl. Add the other ingredients to the bowl and beat until everything is mixed together. Put half the mixture in each of the prepared pans and place on the centre shelf of the preheated oven for about thirty minutes.


4.)'Fruity' Cake: A delicious and fruity treat for the whole family


Ingredients: 2 eggs, 1 c.

salad oil, 2 c. sugar, 1 tsp. salt, 2 c. flour, 1 tsp. baking soda

2 tsp. cinnamon, ground, 1 tsp. vanilla, 1/2 c. chopped nuts (optional), 1 can pie filling (apple, cherry, peach, etc.)


When mixed, stir in can of fruit with its syrup. Pour into a greased and floured 9 x 13 inch baking pan. Bake at 350 degrees for 35-45 minutes. Cool.


5.) White Birthday Cake: This is an easy and delicious cake for anyone's birthday.


Ingredients: 2 1/4 cups cake flour (9 ounces), 1 cup whole milk, 6 large egg whites (3/4 cup), 2 teaspoons almond extract, 1 teaspoon vanilla extract, 1 3/4 cups granulated sugar (12 1/4 ounces), 4 teaspoons baking powder, 1 teaspoon table salt, 12 tablespoons softened unsalted butter (1 1/2 sticks)


Preheat oven to 325 degrees and bake for about 25 minutes.

In this atricle i will show you easy way to prepare how Bakewell Tart Recipe.Use raspberry jam instead of apricot and make a thin layer of glace icing for the top rather than dusting with icing sugar if you prefer – and if you use a ready-made pastry case you can skip the whole of the first method altogether. Here are step by step directions;


BAKEWELL TART

 


INGREDIENTS :


For the pastry


1 oz (25 g) butter or margarine
1 oz (25 g) lard or Cookeen
4 oz (100 g) plain flour
4 tbsp milk (or water, or some of each)
1 tbsp sugar

 


DIRECTIONS :


Preheat the oven to Gas Mark 5 (190ºC) and lightly grease a flan tin or pie dish approximately 1⁄2 in (1.25 cm) deep and 8 in (20 cm) across.
Sift the flour into a large mixing bowl, add the fat in small pieces and rub in until the mixture resembles medium-fine breadcrumbs, then stir in the sugar.
Make a well in the centre of the flour, pour in the milk and/or water and mix together to make a firm, smooth dough.
Turn the dough out onto a floured surface, knead for a couple of minutes then roll out the pastry to fit the flan tin and trim away the excess.
Prick the bottom of the flan with a fork a few times and bake blind for about 15 minutes until the pastry looks slightly crisp but not quite golden. (To bake blind: cover the bottom of the flan case with a piece of greaseproof paper and weigh down with dried beans, rice or lentils.)
Remove the beans and greaseproof paper and return the flan case to the oven for another 5 minutes to crisp up the pastry.

 


INGREDIENTS :


For the filling


3 oz (75 g) butter or margarine
3 oz (75 g) sugar
2 eggs, separated
3 oz (75 g) self-raising flour
4 tbsp ground almonds
Milk
Apricot jam

 


DIRECTIONS :


Put butter and sugar in a large mixing bowl and beat together with an electric whisk until pale and fluffy.
Add the egg yolk all at once, beating continuously to stop the mixture curdling.
Stir in the flour and ground almonds with a metal spoon and add a splash of milk to get the mixture to a soft, dropping consistency.
Whisk the egg whites till stiff in a separate, much smaller bowl– don’t bother to clean the blades first – then fold into the rest of the mixture.
Spread the bottom of the flan case with a thick layer of jam then fill to the top with the cake mixture.
Bake in the oven at Gas Mark 5 (190ºC) for about 25 minutes. Allow to cool and dust with icing sugar.

MICROWAVE morsels and vegetable shortening in uncovered, microwave-safe bowl on MEDIUM-HIGH (70%) power for 1 minute; STIR. The morsels may retain some of their original shape. If necessary, microwave at additional 10- to 15-second intervals, stirring just until melted; cool slightly.

DIP strawberries about halfway into melted morsels; shake off excess.

Place on prepared baking sheet; refrigerate until set.

This is quick and easy recipe for Apple Muffins. Recipe is adapted from grandmother’s dairy-free apple cake, often served for dessert on Friday nights. The apples are first macerated in sugar and oil. The result is an incredibly moist batter and one well suited to muffins. One warning: the muffins don’t brown, so bake them only until a toothpick or cake tester comes out almost clean. Follow the directions very carefully:


QUICK AND EASY APPLE MUFFIN RECIPE


INGREDIENTS


3 medium Granny Smith apples, peeled, cored, and diced
1 cup sugar
½ cup canola or vegetable oil
Nonstick spray or paper muffin cups
2 ¼ cups all-purpose flour
1 tablespoon baking powder
½ teaspoon salt
¼ teaspoon ground cinnamon
¼ teaspoon grated nutmeg
½ cup milk (whole, low-fat, or nonfat)
1 large egg, lightly beaten, at room temperature

DIRECTIONS :


Toss the diced apples with the sugar in a medium bowl. Pour the oil over the top, stir well, and set aside at room temperature for 45 minutes.
Position the rack in the center of the oven and preheat the oven to 400°F. To prepare the muffin tins, spray the indentations and the rims around them with nonstick spray, or line the indentations with paper muffin cups. If using silicon muffin tins, spray as directed, then place them on a baking sheet.
Whisk the flour, baking powder, salt, cinnamon, and nutmeg in a second medium bowl until uniform. Set aside.
Using a wooden spoon, stir the milk and egg into the apple mixture until smooth. Then stir in the prepared flour mixture until moistened.
Fill the prepared tins three-quarters full. Use additional greased tins or small, oven safe, greased ramekins for any leftover batter, or reserve the batter for a second baking. Bake for 25 minutes, or until the muffins have rounded, slightly cracked tops. A toothpick inserted in the center of one muffin should come out with just a few moist crumbs attached.
Set the pan on a wire rack to cool for 10 minutes. Gently rock the muffins back and forth to release them from the tins. Remove them from the pan and cool them for 5 minutes more on the rack before serving. If storing or freezing the muffins, cool them completely before sealing in an airtight container or freezer-safe plastic bags. The muffins will stay fresh for up to 48 hours at room temperature or up to 2 months in the freezer.

1 egg, beaten

1/3 cup butter, softened
1 tsp cinnamon
1/3 cup melted butter


Preheat oven to 350 degrees. Grease a 12-cup muffin pan; set aside.


In a medium bowl, mix the flour, 1/2 cup of the sugar, baking powder, salt, and nutmeg.

Beat egg and milk together in a small bowl. Beat the softened butter in a large bowl until light and fluffy. Add flour mixture and egg mixture alternately to the butter, mixing with a wooden spoon after each addition. Do not over mix! Spoon the batter into the prepared muffin pan, filling each cup about 2/3 full. Bake at 350 degrees for about 15 minutes or until a wooden toothpick inserted into the center comes out clean.

Mix the remaining sugar and the cinnamon in a small bowl. Remove the muffins from the pan and dip the muffin tops into the melted butter then into the sugar and cinnamon mixture. Place right side up on a wire rack. May be cooled or served warm.
