Baking level cakes is something almost every home baker wants to do, but it seems impossible. The first step to baking level cakes is to ensure that you follow the instructions. Beating the eggs or batter too much or too little can lead to cake disaster. Next, make sure that your oven is at the right temperature. I don't mean check the dial to see that you've set it correctly, I mean you have to use a second thermometer to ensure that your oven is hitting the right temperature. Many ovens heat incorrectly, either too hot or too cold. Be sure to preheat your oven so that the cake goes in at the right temperature, too.


Some cakes need to 'climb' the sides of the pan, others need to have lubrication on the sides to prevent this.

Again, follow the instructions in your cake recipe. There's a reason it says to grease and flour the sides - or not!

Using the right size pan, or the right amount of batter in the pan is crucial, too. The middle will always bake slower, giving the gas bubbles more time to expand before the cake 'sets' around the bubbles. If your pan has too much batter, the difference between the middle and the sides will be more pronounced.


Lastly, and especially important when baking special cakes, and especially larger cakes, there is some equipment that will help you. Even regular sized cake layers benefit from cake baking strips, which insulate the sides of the pan to give the whole cake a chance to heat evenly, which in turn leads to a better chance of baking level cake layers.

There are several kinds of strips available, from silicone to cloth. For larger cakes, you'll want a 'core', which is basically a piece of metal inserted into the middle of the cake batter to speed up the heating of the cake in the middle. In combination with the cake strips, the heating core will lead to the most level cake layers you can get.

It’ll be more fun that way! Eating food that you cooked with your own two hands is very satisfying as well as very rewarding. You see you can just pick up the phone and make a call and have food delivered to your doorstep in 30 minutes or less, but what we’re trying to achieve here is to let you have a little fun by cooking. And in this case baking a cake which is very fun because you get to eat cake batter and lick the spoon clean!


Ingredients:


1/3 cup (2.7 ounces) of cooking oil
11/4 cups (22 ounces) of water
1 box (500 grams) of cake mix (any kind)
3 eggs
Cake (150 grams) toppings (any kind)
13 x 9-inch baking pan
1 mixing bowl
Measuring spoons and cups
Mixer (or by hand)

Basically we’re just going to prepare a simple pan-baked cake with cake toppings and nothing fancy, but if you want to make it more than simple, then you can look for more elaborate baking recipes.

You must also be wondering how we were able to convert the amount of oil and water in “cups” to “ounces.” Well here’s how we got it:

1 cup = 236.588237 milliliters x 1/3 = 78.87 milliliters

For the box of cake mix and cake toppings it was more like a guess or approximation, but since cake mixes have different content weights depending on the brand that sells them we had to estimate.

One brand packs their cake mix with 18.25 ounces, which is…

 


1 ounce = 28.35 grams


18.25 ounce x 28.35 grams = 517.39 grams

Procedure:


Pour in all of the 500 grams of cake mix in the mixing bowl and mix it thoroughly.
After mixing the cake mix, you may now put the eggs in the mixing bowl and mix them together.
Now pour the 22 ounces of water into the mixing bowl saturating the mixture.
Next is you pour the 2.7 ounces of cooking oil in the mixing bowl as well.
You can either mix the incredients with a mixer or by hand
Grease the 13 x 9-inch baking pan with butter or lard oil and then pour in the mix.
Take the cooking pan with the mix and bake it in the oven for about 25 to 30 minutes at 350 degrees Kelvin.
Once baked let the cake cool for 10 to 15 minutes.
After it cools you can start putting on the cake toppings as well as any other cake decorations you desire.

In the seventeenth century the rum cake made its first appearance in America where English settlers introduced the English pudding to a different part of the world. It is thought that the African slaves adapted the recipe and this gradually developed into what we now know as rum cake.


The rum cake is native to the Caribbean, Jamaica in particular and many variations of the rum cake recipe have been passed down from generation to generation. If you want the best rum cake results, most Caribbean residents would agree that you need to bake this juicy and rich cake from scratch and use as much fresh ingredients as possible for the best results.
 
So here is your own rum cake recipe from scratch – enjoy baking it and then enjoy eating it afterwards! You will need to gather together:
 
2 cups plus 2 tablespoons softened butter, divided 
2-1/4 cups sugar, divided 
3 large eggs 
1 egg yolk 
2 teaspoons vanilla extract 
2 tablespoons grated lemon rind 
3/4 cup dark rum, divided 
1/2 cup banana liqueur, divided 
3 cups all-purpose flour 
2 teaspoons baking powder 
1/2 teaspoon baking soda 
1/8 teaspoon salt 
1 cup whipping cream 
Powdered sugar 
 
Preheat oven to 350F. Grease a 10 inch cake tin with butter and then dust it with flour. 
 
Beat 1- 1 ½ cups butter and 1-1 ½ cups sugar until the mixture is light and fluffy (use an electric mixer if you want to save your arm muscles!)
 
Add eggs, egg yolk and vanilla and beat until the mixture is well blended. Mix in the lemon rind and then gradually add ½ cup of rum ¼ cup of banana liqueur. Beat well – don’t worry if your batter looks curdled at this stage, it’s all part of the process.
 
In a separate bowl, stir together the flour, salt, baking powder and baking soda. Add this gradually to the batter, alternating with whipped cream and beat continuously. 
 
Pour the batter into the cake tin and bake for 55 to 60 minutes. After this time, remove the tin from the oven and place it on a rack to cool for 15 minutes.
 
While your cake cools in the tin, melt the remaining butter in a saucepan over a medium-high heat. Stir in ¾ cup sugar, ¼ cup banana liqueur, and ¼ cup rum. Bring to the boil, stirring regularly. Reduce the heat to a medium heat and cook for 8 to 10 minutes or until the syrup has thickened a little. Remove from the heat and cool for 10 minutes. 
 
Using a skewer, pierce the cake multiple times and pour the rum syrup evenly over the surface of the cake. Let it stand for 45 minutes. Remove from the tin and leave on the cooling rack to cool further. Sprinkle with some powdered sugar before serving.

The secret to the cake is in properly beating the ingredients, so follow these tips. Let the butter soften and take the eggs out of the fridge to warm a bit. For an airy batter, beat the softened butter and sugar really well until the creamed mixture looks pale and wispy. Beat in the eggs and vanilla until all the streaks are gone. Any curdling you might see will disappear as you beat. Turn off the mixer occasionally and scrape the batter at the sides of the bowl into the path of the beaters so everything gets thoroughly mixed.

Switch to low speed when you add the dry ingredients to keep the flour mixture from flying into the air. Since overbeating the flour can toughen a cake, beat only until the batter has no streaks. Stir in the chips by hand so the mixer does not break them.

Be sure the cake is done before you take it out of the oven. You can use either a cake tester, a thin metal wire with a knob on top, or a wooden pick. Double Chocolate Pound Cake
1 loaf cake or 8 servings
Butter
Flour
1 1/4 cups all-purpose flour
1/4 cup unsweetened baking
cocoa
1/2 teaspoon salt
1 cup butter, softened
(2 sticks)
1 cup sugar
4 eggs
2 teaspoons vanilla
1/2 cup mini chocolate chips

With butter, lightly grease bottom and sides of 8 1/2 x 4 1/2 x 2 1/2 or 9 x 5 x 3-inch loaf pan. Dust with flour. Shake out excess flour. Set aside. With a sifter or mesh strainer, sift 1 1/4 cups flour together with the cocoa and salt into bowl or onto sheet of waxed paper. Set aside.

In large mixer bowl at medium speed, beat together butter and sugar until light and fluffy, about 3 to 5 minutes. Beat in eggs and vanilla until thoroughly blended, at least several minutes. At low speed, gradually beat in reserved flour mixture, 1/2 cup at a time, beating just until blended and no streaks remain. Stir in chips. Spread batter evenly in prepared pan.

Bake in preheated 325 degree F oven until cake begins to pull away from sides of pan and cake tester inserted near center comes out clean, about 60 to 70 minutes for 9-inch pan or 75 to 85 minutes for 8 1/2-inch pan. (If tester shows dark brown, you've hit a melted chocolate chip. Test again in another spot. To prevent overbaking, remove cake from oven as soon as no light brown batter shows on tester.) Cool on wire rack 10 minutes. With narrow spatula or knife, loosen cake from pan. Gently shake onto wire rack. Cool completely. To retain moisture, store cooled cake in plastic wrap. Serve plain or topped with fruit, ice cream or whipped cream, if desired.

Tip #1: Let the cake cool. Don't try to frost the cake until it has had time to completely cool out of the oven. Trying to apply frosting too early can cause the frosting to melt and run down the sides.


Tip #2: Add baking soda. Before frosting your cake, add just a pinch of baking soda to the frosting. The baking soda will help smooth the icing so that it does not crack or begin to flake off the cake.


Tip #3: Dust the cake with flour. If your icing seems too thin and you are worried that it will run off of the cake, first apply a thin layer of flour to the cake.

This will help the icing stick to the cake even if the consistency is slightly runny.

Tip #4: Frost, refrigerate, frost. When you first ice the cake, apply just a thin layer of frosting to the cake, enough to cover the entire cake. Cover the cake and refrigerate it for about one hour. This allows the thin layer of frosting to set and seal in any crumbs that flaked off when applying the first layer. After an hour, apply a full layer of frosting. If you would like a glossy look with a completely smooth layer of frosting, heat a kitchen knife or metal spatula. Then run the knife or spatula lightly along the frosting, which will slightly melt the icing and allow you to smooth it out as desired. It seems no matter how hard we try, our cakes come out bearable at best but truly capturing grandma’s perfect cake is a long gone dream. After so many failed attempts you may not even want to try again but here are some tips to help you overcome some of the most common cake baking mistakes.


If your cakes tend to have a course texture, it is likely one of two problems. One common problem is adding too much baking soda in the mix. The other is too little liquid in the mix. A less likely option is that the sugar and butter wasn’t mixed well enough to create a smooth batter.

Another thing that can lead to a coarsely textured cake is having the temperature too low in your oven. Not all ovens are 350 degrees when you set the dial on 350 degrees. Some ovens run hotter or cooler than the thermostat reads. You can use a heat resistant thermometer to see if your ovens’ setting matches the actual temperature of the oven.

If you tend to bake cakes that seem to be difficult to break away from the pan, there are a few reasons for this. It may be something as simple as the pan requiring more oil and flour. Not removing the cake from the pan at the right time can also cause this issue. If you try to remove it too soon it may be too hot to loosen from the pan, but, on the other hand if it stays in the pan until it’s completely cooled it can cause the same problem.

Time the cake’s release the same as you would the cooking time, as recommended in the recipe. Another way to fix this problem is to cool the pan on a wire rack so air is accessible to the bottom of the cake pan.

Yes, I'm a baking dummy. That was 5 years back. Why I'm calling myself an dummy? Because I don't even know that whipping cream needs to be whipped in the first place! In the end, I did not throw the cheese filling anyway. I still use it as my cake filling. And I proceed to refrigerate it.

And guess what, the filling was dripping all over the place in the fridge! That's a lesson learned, never try to salvage whatever that's already fail. Instead I should have just buy another box of whipping cream and another cheese block and proceed to make a new cheese filling for my cake.

The basic problem I have at time was that I was too impatient. I rushed over it, and hence the result is all too bad for me to see. So I decided to sum up here what are the important rules that we need to adapt before we even start to baking a cake, tarts or whatever.

I also decided to add cupid figurines to the cake also.

She loved the cake, more so than any other gift I gave to her. She couldn't believe I had made it and that I had taken the time to bake and decorate a cake for her. She can't wait till her birthday now.

Line the pan with the cupcake liners then fill 2/3 of them with the mixture. An ice-cream scoop will help you get precise amounts of mixture in the pan. For regular-size pans, use a scoop that measures 1/3 so you only put two.

As they rise, they will occupy the remaining space to form a mound. Place the pan in the oven and let it bake for around 23 minutes. If you need to make more but do not have another cupcake pan, store the mixture in the refrigerator as the first batch of cupcakes cooks. When ready, remove, cool the pan for about 15 minutes then add the remaining mixture. On average, a pan makes 12 cupcakes at a time.

Allow the cupcakes time to cool completely before you can frost them. In the meantime, work on the cupcake frosting recipes you are going to use. There are four basic types of frosting: butter cream, chocolate butter cream, dark chocolate ganache and lemon cream cheese frosting. For butter cream frosting, you will need to mix150g soft butter and 12g confectioner’s sugar. Add 1 tsp vanilla and 2 tsp hot water or milk to make a creamy mix. To make chocolate butter frosting, substitute the vanilla with 2 tsp cocoa.


To make chocolate ganache, you need 1 ounce bittersweet chocolate, ½ cup heavy cream, 3 tbsp butter and 3 tbsp brandy (optional). Melt the first 3 ingredients and mix them all together. Pour in the brandy if using. Allow mixture to cool before spreading generously over your cupcakes. Lemon cheese frosting will give a distinct taste to your cupcakes. For this, sift 30g softened butter, 80g softened cream cheese, 1½ cup confectioner’s sugar and 1 tsp grated lemon rind. Mix the ingredients and beat them till they are creamy, then spread them on the cupcakes. Use either a frosting/pastry spatula or pastry bag to evenly spread either type of frosting over the cupcakes.

I'm here to tell you that the problem with most home baking mistakes isn't in the BAKING, it's in the MIXING of your cakes that most mistakes are made.


 


There are three goals in cake mixing, whether it's a Christmas cake recipe, or any other baked good at any time of the year.


 


The first goal in cake mixing is to combine all the ingredients into a uniform batter.  This may seem obvious, but when you don't scrape the mixing bowl during the process you can have streaks of dry flour in your batter.  If you haven't incorporated eggs in the precise way to get the best emulsification, then how you BAKE the item really won't matter.


 


The second goal is to trap as much air as possible.  This is most often overlooked by the home cake baker.  When creaming fat and sugar together, or whipping egg whites, the idea is to gather as much trapped air to give the cake a light texture and even crumb.  This is accomplished through concerted MIXING, not BAKING.


 


Lastly, ingredients for your birthday cake or Christmas cake recipe are mixed properly to develop the structure of the cake.  How wet and dry ingredients are added during mixing are the building blocks of a cake that is either sunken or bursting from the pan.

Low-Fat cakes most often use an egg foam for structure and texture of the cakes. The first type of low-fat cake mixing method is a Sponge Cake.  Whipped yolks and whites give solid structure and flavor to a sponge cake, again proving that the mixing methods are most important if you want your Christmas cake recipe to be the best it can be.


 


Angel food cakes are absolutely fat-free because they're made entirely of egg whites, sugar, flour, and flavorings.  But again, HOW you whip the egg whites for an angel food method will mean the difference between a dense, chewy cake, or light, fluffy Angel Food cake.


 


Chiffon Cakes are lower fat cakes that use the same method as angel food, but also include some egg yolks to give better structure, and use chemical leavening agents like baking powder or baking soda for extra rise.
