Ingredients


(This is to make a large birthday cake, you can scale down for an ordinary cake)


200 grams of stork or other baking margarine


200 grams of caster sugar


4 medium / large eggs


3 tbs of cocoa powder


Approx 75 grams of cornflour


100 grams of self raising flour


1 tbs baking powder


Vanilla essence


For the Icing


75 grams of margarine


Icing sugar to make a stiff mix


Water


Vanilla essence


Step 1


Using a mixer or food processor, cream together the sugar and margarine until it is light and fluffy. Add 1 tsp of vanilla essence and mix thoroughly.


Step 2


Add the 4 eggs, 1 at a time, mixing thoroughly until each egg is fully blended in.

Leave mixer on for around 5 minutes.

Step 3


Into a weighing scale, put 3 heaped tablespoons of cocoa powder. Add cornflour to make up to 100 grams, then add 100grams of self raising flour. Finally add 1 tablespoon of baking powder.


Step 4


Sieve the flour mix into your mix. Fold in, then mix with mixer until fully incorporated.


Step 5


Split mix between 2 lightly greased non stick 8 inch baking tins. Bake in over at 175 degrees centigrade for around 20 minutes. Test by lightly shaking the tin to see if it wobbles like a jelly. (if it does give it 5 more minutes.) If its firm, slide in a skewer to check the mix is cooked. It should not have any cake mix on, but will have steam from the mix. As long as there is no mix on the skewer, remove from oven to cool.


Step 6


While the cake is cooling, mix the margarine for the icing with 1 tsp of vanilla essence and enough icing sugar to make a stiff mix.

Add 1 tsp of water at a time and mix in, the mix will let down and become creamy and smooth. Set aside until the cake is cold. DO NOT attempt to ice the cake when warm, the icing will go runny.

Tip - when icing, do not spread the icing, as this cake is so light it will break under the pressure. Just add spoonfuls of icing around the bottom layer, then put the top on and rotate slightly to spread the filling.


Step 7


Decorate the top of the cake with sieved icing sugar or cocoa powder. Get a cup of coffee, then eat a huge slice!


To make a celebration cake you can ice the outside of the cake and decorate it with chocolate curls, or ice and fill with whipped cream, or make a chocolate fudge icing mix, or use cream and cherries for a black forest gateaux. What ever floats your boat really.


Variations


You can also make this recipe into a victoria sponge, just take out the cocoa and substitute with more cornflour. Then ice with vanilla icing and jam. Or, use lemon essence and lemon icing for a tangy variation.

A Halloween cake makes a great dessert, and can also be a fun centerpiece on your dinner table while the meal is being served. Here are two creative Halloween cakes that you can try on your own. Don't feel pressured to limit yourselves to these - you can always create your own Halloween dessert masterpieces.

The Happy Pumpkin

You can easily turn your everyday cake mix into a pumpkin creation with the help of bunt pans and decorative icing.

Take 3 boxes of your favorite white or yellow cake mix, and mix according to package decorations. Pour the batter into two bunt pans, and bake according to package decorations. Allow the cakes to cool completely and remove from the pan.

While you are waiting for the cakes to cool, empty three cans of vanilla frosting into a mixing bowl.

If you are pretty practiced with cake decorating, 2 may be enough, but three cans will allow extra to work out unevenness and fingerprints. Add red and yellow food coloring to the frosting, stirring until the frosting becomes the desired orange color for your pumpkin. Frost the flat side of the bunt cakes, and then stack on top of each other to create your pumpkin shape. Then continue to frost the sides of the cake until you have an orange pumpkin.

If you would like to turn your pumpkin into a jack-o-lantern, simply use some black icing to draw your eyes, nose, and a mouth. You can also consider decorating a small cupcake with brown or green icing to create a stem. If you are very practiced in cake decorating, consider some pumpkin vines down the sides and back. The Creepy Spiderweb

If you want something a little spookier for your Halloween party, consider a creepy spider web cake. A little frosting and a chocolate muffin can help you make this creepy cake.

Take one box of your favorite chocolate cake mix and mix it according to the package decorations. Bake in two round pans and allow to cool completely.

While the cakes are cooling, scoop 2 cans of vanilla frosting into a large mixing bowl. Combine yellow and blue food coloring (or yellow and green) until you come up with a spooky green color. Spread a layer between the two cakes, and the cover the rest of the cake with frosting.

Draw a spiderweb on the top of the cake using black icing. You can start by drawing lines straight across as though the cake was a clock - from12 to 6, 1 to 7, 2 to 8, etc. Then starting at the center of the cake, draw larger circles working their way outwards until the web is complete.

Take a chocolate muffin or cupcake and cut of the "stem" so you are left with the top. Frost the entire thing with chocolate frosting and then roll in chocolate sprinkles. Set onto the "web" and attach small pieces of black string licorice to be the legs.

If you would like to get even more creative, you can extend your web down the sides of the cake, and draw on bugs using different colored icing.

This cake will take some time to make, but your time will be well spent. I guarantee you that you will get a lot of compliments from your family and friends once they taste it. If you have any left-overs, you will want to store them in an airtight container inside your refrigerator.


Pumpkin Cake Recipe


Cake Ingredients:


2 1/2 cups all-purpose flour
2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1 1/2 cups granulated sugar
3/4 cup butter, softened
3 eggs
3/4 cup solid packed pumpkin puree
1/2 cup cold milk
1 teaspoon vanilla extract


Preheat oven to 350 degrees. Spray a deep dish cake pan with nonstick vegetable cooking spray.

In a large bowl, combine the flour, baking powder, cinnamon, baking soda and salt, until they are well combined; set aside. In another large bowl, cream together the granulated sugar and softened butter, until they are creamy. Add in the eggs, pumpkin puree, milk and vanilla extract, beating well after each addition. Slowly add the flour mixture into the wet ingredient mixture, mixing well until all ingredients are combined.

Cream Cheese Filling Ingredients:


1 (8 ounce) package cream cheese, softened
1/4 cup granulated sugar


In a medium-sized bowl, whip together the softened cream cheese with the granulated sugar until smooth. Spread 2 1/2 cups of cake batter evenly over bottom of your cake pan. Spoon cream cheese filling evenly over the cake batter. Carefully spread it across the cake batter using a silicone or rubber spatula.

Spoon remaining cake batter over cream cheese filling, spread evenly using a silicone spatula. Bake in your preheated oven for 45 minutes or until the cake tester comes out clean. (test the center of the cake.) Cool completely before adding the topping.

Topping Ingredients:


confectioner's sugar
frozen whipped topping, thawed


A few minutes before serving the pumpkin cake, sprinkle your desired amount of confectioner's sugar on top. Cut cake into desired serving pieces and top with a dollop of whipped topping.
