Have you ever turned a cake mix into cookies? Did you know it was possible to make homemade cookies from cake mix? As a mostly from scratch baker, recipes for cake mix cookies had escaped my attention. But recently, I began experimenting with them in the name of kitchen science.


And now I am discovering creative cake mix cookie recipes everywhere I look. You can make cookies from any mix flavor you choose. The options are endless. There are hundreds of recipes for bar cookies, drop cookies, rolled cookies, and shaped cookies from which to choose.


When I mentioned to my mother and grandmother that I was having fun trying out cookies with a mix, my grandmother said that one of her neighbors makes all her cookies that way and it was hard to tell them from scratch.


Why Use Cookie Recipes that start with boxed mix? Are cookies made from mixes for everyone? Probably not.

If you are an experienced baker who believes in baking only from scratch, they won't be for you.

But, if you love baking shortcuts and the convenience of boxed mixes, they are worth a closer look.


Cake Mix Cookies are perfect for:


Helping inexperienced bakers build their confidence.
Busy home bakers who like easy cookie recipes with short ingredient lists and minimal equipment.
Baking with kids since there is less mixing and measuring to do.

Tips for Cookie Baking Success


Read the recipe all the way before beginning to bake and follow the directions closely.
Don't over mix the cookie dough.
Only drop cookies on cool cookie sheets; never warm.
Line your cookie sheets with parchment paper or silicone liners.
Don't over bake your cookies. They should be set around the edges, but still a bit soft on top.
Cool your cookies completely, before storing them so they don't get soggy.

How to prepare recipe for Coconut Cookies? This is one of my favorite cookies because it combines some of the flavors I love best. Shredded coconut gives them a nice chewy quality and dried cherries provide a dose of tartness. Makes 24 servings. Ingredients and simple directions:


COCONUT COOKIES


INGREDIENTS :


¼ cup (½ stick) unsalted butter or buttery spread, such as Earth Balance, at room temperature, but not melted
½ cup granulated sugar
¾ cup packed light brown sugar
1 large egg
2 teaspoons pure vanilla extract
1½ cups Carol’s Sorghum Blend
½ cup unsweetened cocoa powder (not Dutchprocess or alkali)
1 teaspoon xanthan gum
½ teaspoon salt
¼ teaspoon baking soda
¾ cup gluten-free chocolate chips, such as Tropical Source
½ cup dried sweetened cherries
¼ cup sweetened shredded coconut

 


DIRECTIONS :


Place a rack in the lower-middle position and another in the upper-middle position of the oven. Preheat the oven to 375ºF. Line two 15 × 10-inch baking sheets (not nonstick) with parchment paper.
In a large mixing bowl, beat the butter, granulated sugar, and brown sugar with an electric mixer on low speed until very smooth, about 1 minute. Beat in the egg and vanilla.
In a small bowl, whisk together the sorghum blend, cocoa, xanthan gum, salt, and baking soda and gradually beat into the egg mixture on low speed just until blended. Stir in the chocolate chips, cherries, and coconut. Knead the dough with your hands a few times to make sure the chips, cherries, and coconut are thoroughly incorporated.
Using a wet tablespoon or a #50 metal springaction ice cream scoop, drop 1½-inch balls of dough at least 2 inches apart on the baking sheets, 12 per sheet. Use the bottom of a drinking glass to flatten the cookies slightly. Place one sheet on the lower-middle rack and another on the upper middle rack of the oven.
Bake 12 to 15 minutes, rotating the baking sheets between racks halfway through baking, or until the cookies are firm. Cool the cookies 2 to 3 minutes on the baking sheet, then transfer them to a wire rack to cool completely. Store, tightly covered, for up to 2 days or in the freezer for up to 1 month.

How to prepare Soft Sugar Cookies recipe? These are the bakeshop classics, best the day they’re made. Makes 12 to 14 large cookies. Here are the simple directions:


SOFT SUGAR COOKIES RECIPE


INGREDIENTS :


2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup sugar
3/4 cup solid vegetable shortening
1 large egg plus 1 large egg white, at room temperature
2 teaspoons vanilla extract
1/4 cup milk (regular, low-fat, or fat-free)

DIRECTIONS :


Position the rack in the center of the oven and preheat the oven to 350°F. Line a large baking sheet with parchment paper or a silicone baking mat and set aside.
Whisk the flour, baking powder, baking soda, and salt in a medium bowl; set aside as well.
Beat the sugar and shortening in a large bowl with an electric mixer at medium speed until light and fluffy, about 3 minutes.
Beat in the egg and egg white, scrape down the sides of the bowl, and beat in the vanilla until smooth.
Turn off the beaters, add half the prepared flour mixture, and beat at low speed just until combined. Beat in the milk until smooth, scrape down the bowl again, and beat in the remaining flour mixture at low speed just until a dough forms.
Give the dough a few turns with a rubber spatula to make sure there are no dry pockets of flour, then scoop up 1⁄4-cup measurements of dough and place them on the prepared baking sheet, spacing them 4 inches apart. Gently press the mounds into 3-inch circles.
Bake until set but not too brown, just beige, and still somewhat soft to the touch, about 18 minutes. Another couple of minutes will yield much crunchier cookies.

To cool: Leave the cookies on the baking sheet for 5 minutes, then use a metal spatula to transfer them to a wire rack to continue cooling.


To store: When fully cooled, the cookies can be kept in a sealed container at room temperature for up to 1 day; freezing dramatically alters their texture and is not recommended.


Variations:


Add 1/2 teaspoon ground cinnamon, 1/4 teaspoon grated nutmeg, or 1/4 teaspoon ground mace with the salt. Add 1 teaspoon finely grated lemon zest with the egg white. Reduce the vanilla to 1 teaspoon and add 1 teaspoon maple or rum extract with the remaining vanilla. Dust the cookies with granulated sugar (about ½ teaspoon per cookie) or with colored sugar before baking. Press a blanched almond or a walnut half into the top of each cookie before baking.
